Season the chicken pieces evenly with garlic salt, msg, and pepper, then arrange in one layer on the rack of a large baking pan. Spray on lemon juice liberally with pump sprayer and rub oregano leaves between palms over chicken pieces. Place pan in upper level of preheated, 400 degree oven. After 30 minutes, turn chicken pieces and spray again with lemon juice, rubbing more oregano over all. Return to oven for 30 minutes more, then remove rack and drain off fat from pan. Arrange chicken pieces in bottom of pan, spray with lemon juice, and cover with aluminum foil. Return pan to lower level of 300 degree oven for 30 minutes more. Serve with rice cooked with several whole bay leaves. |
